Kale and other dark leafy greens are spectacular in more ways than just raw salads. In fact, a gentle sauté of 5 minutes or less actually enhances the nutrient absorption of greens since precious compounds become more digestible after a little heat has broken down the plant fibers. So if eating your greens warm is at times more tantalizing than raw then go for it and savor this savory moment.
Savory Kale Spread:
- 1 bunch Lacinato kale (Dinosaur Kale), washed & stemmed
- 1/2 c. broth
- 1/2 c. walnuts
- 1 tsp. fresh garlic, minced
- Optional-Season to taste w/tamari or sea salt
Steam de-stemmed kale in broth for 5 minutes until tender. Leaving the kale in the skillet, pour only the warmed skillet broth into a high performance blender. Blend the walnuts and broth until creamy. Add the steamed kale and garlic, and blend until smooth. Keeps up to 1 week in refrigerator.
Yield: 2 cups spread

- 1/2 c. walnuts (or pecans, cashews, almonds, sunflower seeds)
- 1 clove garlic
- Any optional seasonings as desired
Tips:
This makes an exceptional sandwich spread or veggie dip. My favorite way to enjoy it is by smothering it on a quality loaf of seeded, artisan bread.
For other creative additions, add nutritional yeast or fresh herbs such as rosemary.
